Thank you to everyone who helped validate the draft qualifications and skills standards developed for a range of job roles across the food and beverage industry.
Your feedback will inform final updates to the drafts before they progress to the ‘finalisation’ stage of the project.
After they have undergone a final checking process, the documents will be submitted for endorsement by the Australian Industry and Skills Committee (AISC) and State/Territory Ministers. Once endorsed, the updated skills standards will be published on training.gov.au.

Food & Beverage Processing Project
Today’s consumers want to know where their food comes from, what is in it, and how it has been prepared and packaged. In response, industry has developed methods for improving traceability, automation, and contaminant control. The skills standards for food and beverage processing are being updated to reflect these changes.
Flour Milling Project
The flour milling industry is adopting ever more sophisticated automated systems and processes, in response to continued high demand for flour, oats, maize and other milled products. The skills standards for this sector are being reviewed and updated to reflect the technical expertise required of this work, and to support flexible career pathways.
High Volume Production Baking Project
There continues to be high demand for pastry, cakes, biscuits and bread, and production of these products is becoming increasingly digitalised and automated, meaning the skills required for the work are changing. A Certificate III in High Volume Baking has been drafted to incorporate the skills standards for all four sub-sectors of plant baking (pastry, cakes, biscuits and bread) and to reflect current industry practices and terminology.
